Ingredients

  • 2 Ribeye Steaks (About 1 inch Thick)
  • Salt - To Taste
  • 2 Tablespoons of Olive Oil
  • 4 Tablespoons of Unsalted Butter - At Room Temperature
  • 2 Tablespoons of Chopped Fresh Parsley
  • 1 Teaspoon of Lemon Zest (Optional)
  • Lemon Wedges - For Serving

Steps

  1. Remove the ribeye steaks from the refrigerator and let them sit at room temperature for about 30 minutes to 1 hour before cooking. This allows the meat to cook more evenly.
  2. Preheat your grill to medium-high heat. If using a gas grill, preheat it to about 400-450°F (200-230°C).
  3. While the grill is heating up, season both sides of the ribeye steaks generously with salt and freshly ground black pepper.
  4. Drizzle the olive oil over the steaks and rub it into the meat to coat evenly.
  5. In a small bowl, mix together the softened butter, minced garlic, chopped parsley, thyme, rosemary, and lemon zest (if using) until well combined. Set aside.
  6. Once the grill is hot, place the seasoned ribeye steaks on the grill grates. Grill the steaks for about 4-5 minutes on each side for medium-rare doneness, or adjust the cooking time according to your desired level of doneness.
  7. During the last minute of grilling, top each steak with a spoonful of the herb butter mixture, allowing it to melt and infuse the steaks with flavor.
  8. Remove the grilled ribeye steaks from the grill and transfer them to a plate or cutting board. Allow the steaks to rest for a few minutes to allow the juices to redistribute.
  9. Serve the grilled ribeye steaks hot, with additional herb butter if desired, and lemon wedges on the side for squeezing over the meat. Enjoy!
