Xmas Morning Frittata

Ingredients

• Light Olive Oil
• Onion (Chopped)
• Broccoli Head Steamed (small-medium and cut into florets)
• Salt
• Ground Black Pepper
• Red Peppers (Rosted & Thinly Sliced)
• Eggs
• Milk (or Almond Milk)
• Cheddar Cheese

Steps

3. Preheat the oven to 180°C
4. Heat the olive oil over medium-high heat in a 10-inch nonstick skillet. Add in the onion and garlic and cook for 1-2 minutes or until soft and fragrant.
5. Add in the broccoli and spinach and season the mixture with salt and pepper. Cook the vegetables until the spinach has wilted. Stir in the roasted red peppers.
6. In a large bowl beat the eggs with the milk until well combined and creamy. Season with salt and pepper. With the heat on medium-low, pour the eggs into the skillet and stir.
7. Transfer the skillet to the preheated oven and bake the frittata for 20 minutes. Sprinkle the cheese on top and bake for another 5-10 minutes or until the frittata is set and the cheese is melted.
8. Cool the frittata for 5 minutes before slicing.
