Chicken "Bruschetta"

Nothing is easier to make, and nothing is tastier or more delicious either! Children, as well as adults, will love it and you can make it to wow any dinner guest! Just serve it with a side of pasta, made with olive oil and garlic, if you would like to indulge, or opt for a healthy bowl of pearled barley!

Ingredients

  • 4 skinless, boneless chicken breast halves
  • 4 tbs extra virgin olive oil
  • 2 tsp minced garlic
  • 1 large tomato, cored & chopped
  • 1 tsp balsamic syrup
  • 1/2 cup diced fresh mozzarella cheese
  • Black Pepper to taste
  • Salt to taste
  • Red chili flakes if desired

Steps

  1. Sautee minced garlic in a non-stick pan with a tablespoon of extra virgin olive oil. Mix tomato, basil, garlic and dress with 2 tablespoons of extra virgin olive oil.
  2. Rub chicken with 1 tablespoon of olive oil, salt and pepper. Sautee on hot skillet for 2 to 3 minutes on each side, on medium heat. Place chicken on ovenproof dish. Place 1/4 of the mixture on each chicken breast. Sprinkle mozzarella cheese on each.
  3. Cook for a few minutes, or until cheese melts. Serve immediately.
