Watermelon Feta Salad

Nothing screams summer like this salad! The sweet watermelon, the pungent freshness of the mint and the rich roundness of a good feta cheese makes it an unusual combination and definitely a winner! You can slightly grill the watermelon and let it cool before preparing the salad; this adds a little extra flavour and makes all the difference, trust me! Try it to believe it!

Ingredients

1 kg watermelon cut in cubes
1 Brown Onion
2 tbs Balsamic vinegar
1/2 cup extra virgin olive oil
1/2 cup loosely packed fresh mint
150g feta cheese, crumbled
Salt to taste
Black Pepper to taste

Steps

Peel and thinly slice the onion. Combine the oil, vinegar, salt and pepper in a small bowl and whisk until the salt is dissolved. Throw in the chopped mint, and add if needed.
In a serving bowl, add the melon, onion, and feta. Pour the dressing over it, and toss gently until it is mixed well. Garnish with mint sprigs.
