Soak the bread in milk.Heat oil and butter in a large pan and fry the onions and garlic over medium-high heat. When the onions are soft, about 5 minutes, add the curry powder, salt, chutney, jam, Worcester sauce, 1 tsp turmeric, and vinegar.
Set the heat to low heat and cook. Stir occasionally until the beef is cooked. Then, remove it from the stove.Beat the eggs with reserved milk – you should have about 300 millilitres or about 1 1/4 cups. Season with salt and 1 tsp turmeric.Pour over the meat mixture and put a few of the bay leaves on top. You can make a pattern or just scatter them about.
You do not want the custard to dry out. Bake, uncovered for 30min at 180 Celsius, or until set.
Serve with mixed rice or couscous, coconut.
Braised Beef Brisket
Heat the oven and season the meat. Arrange a rack in the lower third of the oven, remove the racks above it, and pre-heat to 180 Celsius.
Once the beef is cooked remove it from the oven and place it outside for an hour to let it rest and cool.
Once the beef is rested and cooled remove the soft meat from the bone and shred it into smaller pieces with your hands. Place the beef in a bowl and add some of the beef broth that is left in the pan to keep the beef moist, it is now ready to add to the Bobotie recipe.
